Kombucha – making you own is easier than you think!

Kombuca is an ancient beverage with a history going back over 2,000 years. It is made by fermenting black or green tea, sugar and boiling filtered water with a Symbiotic Culture of Friendly Bacteria and Yeast ('SCOBY'). The 'SCOBY' consumes the sugar during fermentation converting it into a lightly carbonated drink. Filtered water is used as both Chlorine and Fluoride will interfer with the ‘SCOBY’.

It contains beneficial probiotics, antioxidants, gluconic acid (a pH regulator), acetic acid (an anti-microbial acid, which also stabilizes blood sugar) along with micronutrients (vitamins): Thiamin (B1), Riboflavin (B2), Niacin & Niacinmide (B3), Pantothenic Acid (B5), Pyradoxine (B6), Biotin (B7), Folic Acid (B9), B-12, and Vitamin C. It also contains more vitamin C than store bought orange juice. These micronutrients are in a form most availble to us and drinking a small glass daily of Kombucha over a long period of time will give you water soluble vitamins that are readily utilised by the body.

When fermentation is complete the sugar content is approximately 2-6g per 250ml glass of Kombucha (orange juice has approximately 24g of sugar and natural carrot juice13g per 250mls).

You can make your own fermented Kombuca tea with our hand crafted, certified lead free and non toxic glazed pots (lower fired and imported ceramics can contain lead). Our ceramic pots also protect the SCOBY from sunlight and the walls act like a thermos, warming the brew and speeding up the fermentation process. 

The dispensing tap allows you to use the Continuous Fermentation Method. This method allows you to dispense 10-20% of Kombucha every few days and then top up with the same amount of new tea. It makes a lot of Kombucha quickly and the sugar is fermented and broken down faster than the batch method. Therefore you never run out or have to wait for a batch to develop. Or if you prefer these pots can also be used to make individual batches.
